
Stir Fried Spicy Papaya Leaves
Indonesian style
Add some dried anchovies if desired to reduce some bitterness from the papaya leaves
Ingredients

150 grams Papaya leaves

2 cloves Garlic

4 Bird's eye chilies
-
3 Shallots
-
1/2 teaspoon Salt

1/2 teaspoon Sugar

100 ml Water

Directions
Not only the fruit, papaya leaves are edible and rich in nutrition. There are some recipes to cook papaya leaves, especially in Asia. Some are cook as a soup with coconut milk or curry powder, but this recipe let you cook in simple way.
Wash clean the papaya leaves, rub and briefly massage with a little bit salt. Rinse them under running water.
Boil water on a pot. Add the papaya leaves and let it cook until the leaves are soften.
Remove the pot from heat and drain papaya leaves, set aside.
Peel and chop the shallots and garlic. Slice the bird's eye chilies also.
Heat vegetable oil on a pan fry, and saute chopped shallots and garlic until fragrant.
Add in papaya leaves and sliced bird's eye chilies, add sugar and salt to adjust the seasoning, and add some water if necessary.
Stir constantly until the seasonings are evenly coat papaya leaves. Remove from the heat and serve on a plate.
