
Salted Fish Fried Rice
Malaysian style
The key ingredient is salted fish, other vegetables and egg are optional
Ingredients

400 grams Steamed white riceLeftover at least day old

50 grams Salted fishAny salted fish or anchovy

3 cloves GarlicPounded

100 grams Gai lan (Chinese broccoli)Sliced

3 tablespoons Vegetable oil

5 Thai chilliesChopped

1 tablespoon Oyster sauce

1 tablespoon Fish sauce
Directions
Asian cooking recipe offers us more choices, even for simple dish like fried rice. With this recipe you no longer hesitate to cook fried rice with your leftover rice.
Heat the vegetable oil on wok or frying pan over high heat.
Saute the garlic, shallots and chilies until fragrant.
Chop the salted fish into smaller pieces and add into the wok, stir well.
Toss and break up rice, stir fry for 5 minutes or until heated through.
Season with fish sauce and oyster sauce, mix well and continue stir fry for another minute.
Add in Gai lan (Chinese broccoli) and stir thoroughly. Try to taste and adjust the seasoning if necessary.
Remove the fried rice from heat and serve on the plate. Garnish with raw tomatoes, cucumbers, long beans and fresh lettuces.
Add salted eggs and the remaining salted fish if you desired too.
