
Deep Fried Shrimp with Tamarind Sauce

Directions
Likewise other Thai cuisine, Tom Yum, this recipe also offer sour and spicy taste. Tamarind is common ingredient use in Thailand to cook some dishes. With the unique Asian flavor from the Tamarind sauce, this recipe is the ultimate alternative way to cook shrimp.
In a cup, mix tamarind paste with hot water and stir until the paste dissolved completely.
Add the rest of tamarind sauce ingredients, and stir completely.
Adjust the flavor to your preference, this sauce will taste sweet, sour and spicy.
Prepare the shrimps. Remove the head and shell, but keep the tail on. Devein the shrimps and wash clean.
Dry the shrimps with paper towel and transfer them to the bowl. Pour in the tamarind sauce and coat the shrimps evenly, put aside.
Heat the oil on frying pan over medium high heat. Add the minced garlic, ginger and red chilies, stir fry for a minute or until fragrant.
Transfer the shrimps and all tamarind sauce into frying pan. Stir fry for 4 minutes or until the shrimps turn to curl inward.
Remove from the heat and transfer to the plate. Garnish with dried shallots and fresh coriander before serve.
