Peel the cassava and place in a bowl of cold water to avoid the oxidation.

Slice the cassava into 5 - 6 cm length, or adjust to your own preferences.

Bring oil on a pan to boil over high heat.
Drain the cassava one at the time and fry until cook, or until turn into golden brown.
Repeat until finish the cassava chunks.

Remove from the heat and drain cassava with paper towel.
Plate them and sprinkle with salt for seasoning, serve while it's hot.
Or garnish them with any desired herb leaves.
