Yang Chow fried rice (Chinese egg fried rice) is one of the most popular dish in any Chinese restaurant. With this recipe in your hand, no need to worry anymore if you have white rice leftovers. You can always store in the fridge, and the next day can turn into tasty fried rice with easy steps.

Steps

Pull out the rice from the fridge, break up any lump and separate the rice grains by using hand.

Prepare the other ingredients. Rinse the shrimps with cold water, peel and devein.
Crush the garlics and chop the onion finely. Dice the carrot into 1/2 inch size.
Dice the char siu (Chinese BBQ roast pork) into 1 inch size.

Heat the vegetable oil in a wok over high heat.
Stir fry the sliced onion and crushed garlics until fragrant.

Add the deveined shrimps and char siu, fry for 2 minutes or until the shrimps cooked through.

Add the rice and stir fry for 1 minute. Add the green peas and carrots, continue stir fry for another minute.
Use your spatula to break up any remaining rice clumps and flatten out the rice.

Lower the heat and crack the eggs and pour the eggs on top of the rice. Try to pour the eggs evenly.
Let is sit for 1 minute. Turn the heat back up and stir to let the eggs and rice can be mixed well.

Season with soy sauce, white pepper and salt. Give another stir and flip to let the seasoning mix well.
Remove from the heat and serve it.
