Fried ripe jackfruit would be the suitable snack for you, if you’re in vegan or keto diet. The sweet and its fiber-like texture is often consider as a meat substitute. Jackfruit is a good source of vitamin C and other important vitamins and minerals.

Prepare the jackfruits, make sure to loosen into each bulb.
If preferred to fry without the seed, remove the seed from each bulb.

In mixing bowl, combine wheat flour, powdered sugar, rice flour and water. Mix well.
Adjust the amount of water, don't get too watery batter.

Add baking powder and vanilla powder into a mixing bowl. If desired, season the batter mixture with salt. Mix well.

Transfer in each of jackfruit bulb and coat them.

Heat the oil in large skillet over medium high heat. Test the oil by drop a pinch of flour and if it sizzles, it's ready.
Gently place into oil and toss occasionally, cook for about 3-5 minutes or until evenly golden brown.

Remove from the heat and drain the excess oil in paper towels. Serve it warm with your favorite drink.
