This baked potato recipe allow you to prepare nice and healthy meal, quick and easy. You can replace the tuna with other ingredients, bacon and cheese for instance. Find the recipe here.

Preheat oven to 180 C or 350 F.
Scrub and pierce potatoes several time with a fork.

Pat the potatoes dry if still wet. Coat the potatoes with olive oil evenly and sprinkle the potatoes with some salt.
This step will help to get nice and crispy potatoes skin.

Put the potatoes in the preheated oven for 60 minutes to 90 minutes, or until the potatoes are tender and easily pierced with a fork.
Let cool for 5 minutes or until you are able to handle.

Split the potatoes in half and scoop out the inside and put them aside in a mixing bowl.
Remember to leave enough in the shell for each half, so the skin does not break when handling.

Mash the inside of the potatoes in the mixing bowl with butter. Then add other ingredients, tuna, mayonnaise and black pepper. Mix well.

Divide the tuna mixture between 4 potato halves equally. Top with sliced spring onions and serve it.
