Sweet potatoes are great non-starchy carbohydrate and contain more vitamin C than regular potatoes which needed and utilise daily by our bodies. And crispy sweet potato fries are one of the best way to enjoy the good health benefit of sweet potatoes.

Wash and peel the sweet potatoes. Cut into 1/4 inch thick fries.
In a large colander, rinse sweet potatoes under cold running water for about 15 seconds.
Dry them with paper towels.

In a bowl mix the cornstarch and club soda. In batches, add sweet potatoes and toss to coat.
While coating the sweet potatoes, heat the oil to 190 C (375 F).

Fry sweet potato one at a time so they don't stick together, until golden brown and crispy or about 7 to 9 minutes.

To serve, season the sweet potatoes with kosher salt and chopped parsley,
and along with your desired sauce, honey mustard or chili mayo.
