1 inch Ginger julienned
2 Cloves Garlic minced
1/2 cup Beef broth
1 tablespoon Oyster sauce
1 tablespoon Dark soy sauce optional
1/2 teaspoon Sesame oil
2 stalks Scallions (cut into 2-inch (5cm) strips)

Combine the sliced beef with cornstarch, soy sauce, Shaoxing wine (if using), and white pepper in a bowl. Mix well and marinate for at least 10 minutes, allowing the flavors to infuse.


Preheat your wok or large pan over high heat. Add the vegetable oil and swirl to coat the bottom. Once hot, carefully add the beef and spread it out in a single layer. Sear for 1-2 minutes per side, or until just cooked through. Remove the beef from the pan and set aside.


Add a little more oil to the pan if needed. Reduce heat to medium and add the onions, ginger, and garlic. Stir-fry for 2-3 minutes, or until the onions soften and become translucent.


Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Add the oyster sauce, dark soy sauce (if using), and sesame oil. Bring to a simmer and cook for 1 minute.


Return the cooked beef to the pan and toss it gently to coat in the sauce, then add the scallions into the wok.
Cook for another minute to heat through.


Remove from the heat and serve immediately over hot steamed rice. Enjoy the balance of textures and flavors in every bite!
