For those who don't know ferns, this vegetable belongs to the group of ferns. This type of vegetable usually grows in dry and humid areas.

Spicy fern stir-fry is a popular dish in many Asian cuisines, particularly in Southeast Asia. It typically features young and tender fern shoots, often known as “fiddlehead ferns,” stir-fried with a spicy and flavorful sauce. Here’s a basic recipe for making spicy fern stir-fry:


  • 1 pound (450g) fiddlehead ferns, cleaned and trimmed
  • 2 tablespoons vegetable oil
  • 2-3 cloves garlic, minced
  • 1-2 red or green chili peppers, sliced (adjust to your spice preference)
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar (adjust to taste)
  • Salt and pepper to taste
  • Optional garnishes: chopped cilantro, sliced scallions, or crushed peanuts


  1. Prepare the ferns: Start by cleaning and trimming the fiddlehead ferns. Remove any brown or tough parts and wash them thoroughly under cold running water. Drain and set aside.
  2. Heat the oil: Heat the vegetable oil in a wok or large skillet over medium-high heat.
  3. Add garlic and chili peppers: Add the minced garlic and sliced chili peppers to the hot oil. Stir-fry for about 30 seconds or until they become fragrant. Be cautious not to burn the garlic.
  4. Add ferns: Add the cleaned and trimmed fiddlehead ferns to the skillet. Stir-fry them for 3-4 minutes, or until they start to become tender. Stirring constantly helps them cook evenly.
  5. Prepare the sauce: In a small bowl, mix together the oyster sauce, soy sauce, sugar, salt, and pepper. Adjust the sugar and salt to your taste preference. You can also add a splash of water if you want a saucier dish.
  6. Combine and stir-fry: Pour the sauce mixture over the ferns in the skillet. Continue to stir-fry for another 2-3 minutes, or until the ferns are fully cooked and coated with the sauce. They should be tender but still slightly crisp.
  7. Garnish and serve: Remove the stir-fried ferns from heat. Garnish with chopped cilantro, sliced scallions, or crushed peanuts if desired. Transfer to a serving platter and serve hot.

Spicy fern stir-fry is often enjoyed as a side dish or served with steamed rice as a main course. The dish offers a delightful combination of the earthy flavor of the ferns and the spicy-savory sauce, making it a unique and delicious addition to your Asian cuisine repertoire.



Puree the onion, garlic, candlenut, chili, and shrimp paste. Saute until fragrant


Enter the fern. Add sugar, salt and shrimp seasoning


Cook until done. Serve with a sprinkling of fried onions.
