Deep fried breaded scallops or also known as Hotate Fry is another tasty Japanese appetizer. This recipe is similar to deep fried breaded shrimp (Ebi Fry), you can check the recipe here. Clean the scallops by rinse them under cold water and pat them dry with paper towel.

Prepare 3 bowls.
First bowl, combine all purpose flour, ground black pepper and salt. Whisk them to mix well.
Second bowl, beat the eggs with the milk. And transfer the panko (Japanese bread crumbs) in the third bowl.

Heat the vegetable oil in a large skillet on medium-high heat until it just begins to shimmer.

Dust each of the scallop with the flour mixture, shake off the excess. Then coat with the egg mixture. Lastly, roll them in the panko.
Repeat the steps with the remaining scallops.

Gently toss coated scallops into the heated oil. Let it cook for about 2 minutes or until golden brown.
Turn the scallops and cook the other side for another 2 minutes or until cooked through.
Reduce the heat if the bread crumbs browning too quickly.

Remove from the heat and transfer them to paper towels to absorb the excess oil.
Serve them with your preferred sauces.
