  1. Winter Melon: The star of the soup is the winter melon, also known as white gourd or ash gourd. It is peeled, deseeded, and cubed. Winter melon has a neutral flavor and absorbs the flavors of the soup well.
  2. Protein: Depending on the recipe and personal preferences, you can add protein sources such as chicken, pork, or shrimp. These proteins add depth of flavor and nutritional value to the soup.
  3. Aromatics: Aromatics like ginger and garlic are used to infuse the soup with their fragrant flavors.

In a large bowl, soak the glass noodles in cold water for about 20-25 minutes. Drain and put aside.


Rinse the winter melon and cut into 1/4 inch thick cubes.
If desired, remove the outer skin by peel off the dark green skin. Then cut into cubes.


In a large pot, bring the water into a boil. Add the shredded lean pork, let it boil for 5 minutes.
Add the winter melon cubes, dried shrimps, ground white pepper, gingers and red dates. Lower the heat into medium temperature and continue to boil for another 20-25 minutes,
then bring to simmer over low heat for about 40-45 minutes or until the soup taste sweet and the winter melon are soft. Add salt to adjust the taste if necessary.
Add the soaked glass noodles and continue boil for 2-3 minutes.


Remove from the heat and serve it.
