In a large bowl, soak the glass noodles in cold water for about 20-25 minutes. Drain and put aside.

Rinse the winter melon and cut into 1/4 inch thick cubes.
If desired, remove the outer skin by peel off the dark green skin. Then cut into cubes.

In a large pot, bring the water into a boil. Add the shredded lean pork, let it boil for 5 minutes.
Add the winter melon cubes, dried shrimps, ground white pepper, gingers and red dates. Lower the heat into medium temperature and continue to boil for another 20-25 minutes,
then bring to simmer over low heat for about 40-45 minutes or until the soup taste sweet and the winter melon are soft. Add salt to adjust the taste if necessary.
Add the soaked glass noodles and continue boil for 2-3 minutes.
