
Pig Ears – The Authentic Chinese Braised Pig Ears Recipe

Directions
This recipe is not for everyone, but if you are fancy to eat something different than just meat, it’s perfect for you. It’s takes time to cook this soy braised pig ear, but it’s worth to try.
Rinse the ear under cold running water and clean very well. You need to scrub any dirt and shave off the excess hair.
Bring water in a large pot to the boil. Add the the ear to blanch it for about 15 minutes. Throw away the water and wash the pot.
Rinse the ginger without peeling it and cut into few large chunks. Then put the gingers into the pot, add garlics, dried chilies, soy sauce, Chinese rice wine, cinnamon sticks, star anise, sugar, salt and water altogether. Turn the heat on low temperature and bring to simmer until the sugar completely dissolved.
Add the cleaned ear into the pot, cover the lid and bring to boil, then reduce the heat and let simmer on low heat for about 3 hours, or until the sauce become gelatinous and the ear is tender.
Remove the ear from heat and let it cool until you can handle. Cut the ear into small strips along the gristle, transfer to serving bowl.
