- Besides tempura, there is also a snack called kakiage whose appearance is not much different. Kakiage can be called tempura too, but the vegetables used are thinly sliced like matchsticks. At first glance, it looks like bakwan vegetables from Indonesia.

2 Done | How to Make Kakiage:Peel the prawns, then remove the heads and tail ends. Split into two parts, then wash and drain. |
3 Done | Dry the prawns and vegetables with paper towels to remove any remaining liquid adhering to the surface. |
4 Done | Mix all vegetables and prawns with flour, salt, and cornstarch. |
5 Done | Add the soda water, then stir well until the wet flour sticks to the shrimp and vegetables. |
6 Done | Heat the cooking oil, then put the kakiage ingredients in the vegetable ladle and add the hot oil. When it starts to dry, remove it from the vegetable ladle. This frying technique aims to prevent the kakiage from spreading when fried. |
7 Done | You can also arrange the kakiage dough on a spatula. Press it down with another spatula, then slowly lower it into the hot oil. When the surface is dry, remove it from the spatula. |
8 Done | Fry the kakiage until crispy and remove before it turns brown. |
9 Done | Drain the oil from the kakiage, then serve immediately with chili sauce, mayonnaise, or a dip made from a mixture of soy sauce, sugar, mirin, and konbu broth. |
