Thai milk bubble tea or some called boba tea are becoming a huge trend in most of Asian countries lately. Probably there are hundreds of franchise brand for this sweet drink with black ball pearls as the trademark. Each of them also claims their own unique taste. With this recipe, you can serve homemade Thai milk tea with boba pearls from scratch. You can control the sweetness level as you desired also!

FOR THAI TEA

Bring water to boil in saucepan. Add in Thai tea and steep for 15 minutes or until turns into very dark orange color.
Remove from heat and strain the tea.

Add in the dark brown sugar, sweetened condensed milk, and evaporated milk to tea.
Allow the tea mix to cool on room temperature then chilling it in the fridge.

FOR TAPIOCA BOBA PERLS

In a clean pot, add in boiling water and dark brown sugar. Stir the mixture continuously until the dark brown sugar melted.
Once it's melted, add in tapioca flour and mix it well until there is no more lump.

Cook the mixture over low heat and continuously stir until the mixture all stick together forming sort of like a dough.
Transfer to a flat clean surface and knead until the dough becomes smooth.

Divide the dough into 2 and roll each into an elongated thin shape. Cut them into small pieces in size to be able to pass through straw.
Roll each piece in between your palms to turn them into small raw boba pearls. Repeat for the remaining dough.

Bring water to boil in a small pot and add in the raw boba pearls. Let it cook for 15 minutes or until the desired consistency is achieved, either soft or chewy. Once the boba pearls cooked, it will become darker. Remove from the heat and transfer them into a sugar syrup or a bowl with a little water to prevent them from sticking together.

TO SERVE

Add 1/4 cup cooked boba pearls to each glass. Pour the chilled and sweetened Thai tea over the boba pearls and enjoy!
