The oxtail soup is made with beef tail. There are at least five versions of oxtail soup that are popular around the world: traditional Korean food, Chinese food which is more like stew, fried/grilled oxtail mixed with various kinds of soup which is a popular food in Indonesia, an ethnic food of the Southern United States that has been around since the period before the revolutionary war, and a thick, savory soup that has been popular in Great Britain since the 18th century. Creole oxtail soup is made from tomatoes with oxtail, potatoes, green beans, corn, mirepoix, garlic and spices.

Boil the oxtail and tetelan until tender, discard the cooking water and set aside.

Saute ground spices until fragrant, add cloves and cardamom.
