
Soybean Sprout Soup

2 cups Soybean sprouts

Directions
The beauty of preparing this type of Korean soup is the broth options to cook. Beef broth, chicken broth, pork broth, anchovy broth or even just simply water. The simplicity also from the ingredients, soybean sprout is pretty easy to find and prepare.
Clean the soybean sprout in water. Drain them and take off any unwanted parts if necessary.
Heat the oil in a pot over medium high heat. Once heated, add the minced garlic and soy sauce, cook for 3 minutes.
Pour in the water into the pot and place the sprouts and season with salt according to your preference. Continue cook until it begins to boil.
Lower down the heat and continue cook over low heat for another 20 minutes with a lid on.
Remove from the heat and serve in a bowl and top with the chopped scallions and red pepper flakes if desired.
