Japanese Red Bean Pancake (Dorayaki)

with homemade sweet red bean paste (anko)

Some of you who are the fans of Japanese origin cartoon character, Doraemon, surely familiar with this dessert. This pancake also known as Dorayaki. Sweet red bean paste that sandwich between two tender pancakes, will be suitable for your breakfast or tea break snack. Shall red bean paste doesn’t suit you well, go with your favorite jam instead. It can be chocolate jam, peanut butter jam or even nutella!

Soak the read beans for 5 to 8 hours. Rinse under cold water and drain well.

Transfer the read beans into a pot and add enough water, and bring to boil. Bring to simmer over low heat for 1 hour, add the water if necessary. Continue cook until the red beans soft enough or until you can easily squash them within your fingers.

Drain the water and transfer back the read beans into pot. Add in sugar and salt, turn the heat into medium high.
Continuously stir for 10 minutes or until forming a paste.

Remove from the heat and let it cool completely.

PANCAKE

In a large mixing bowl, beat the eggs and add the sugar. Use the hand whisker, mix until the mixture turns white.
Add honey and continue mix until well blended.

Add in baking soda into the mixture and mix well. The next ingredient to add is mirin, if you are using them. Mix well the mixture.

Divide the flour into two part, and add the first part into mixture. Stir and mix well.

Add another part of flour and stir continuously until mix well.

Pour water into mixture and stir continuously until well blended.

Heat small amount of vegetable oil on non-stick frying pan over medium heat. Wipe the excess oil on frying pan.

Pour slowly the pancake mixture to frying pan using a ladle, to get equal size for all pancakes. Cook the pancake until small bubbles forming at the surface. Flip the pancake over to the other side and let it cook for 2 minutes. Remove the pancake from the heat and repeat until finish the mixture.

To serve the Dorayaki pancakes, sandwich the sweet anko paste between two pancakes.
