Directions
This recipe is basically a Japanese style of fried rice that wrapped in omelette. It’s suitable for you who quite bored with ordinary scrambled egg in fried rice. Kids will love this omurice!

FOR THE FRIED RICEHeat the vegetable oil in skillet over medium-high heat. Sauté the finely chopped onion until translucent or about 3 minutes. |

Add the chicken and stir fry until cooked through. |

Break the rice up with your hands and add to the skillet. Cook the rice for 2 minutes, then stir in ketchup and soy sauce. Stir until well combined. Remove from the heat and transfer to a plate. |

FOR THE OMELETTEIn a bowl, crack the eggs and beat with the milk using a whisk. |

Coat the skillet or non-stick pan with oil over medium high heat. |

When the eggs half cooked, add half of the fried rice to the center of the omelette. Use a spatula to fold one side over the top of the rice, then fold the other side. |

Repeat the step 5 and 6 to cook for the remaining half egg mixture and fried rice. |

Serve it with fresh lettuce and cherries tomato and drizzle some ketchup on top of the omurice. |
